Retomados os eventos, tem participado de grandes festivais de churrasco e festivais gastronômicos, Brasil a fora, sobre assuntos do mato e sustentabilidade , sempre que possível enfatizando a utilização de ingredientes locais. Na bagagem, leva participações em programas como “Hell´s kitchen”, do Sbt e “A Batalha – Food Truck”, transmitido pela GNT, Fabrica de casamentos. Em 2014, o chef subiu o Aconcágua. Pelo projeto ‘Cozinhando nas Alturas’, que surgiu em 2012, o chef foi convidado pela equipe da Mercedes-Benz a cozinhar a bordo do veleiro interoceânico de Mike Horn, famoso explorador e aventureiro sul-africano.
De origem italiana, portuguesa e espanhola, Giusti vem de um berço de ouro em termos culinários. Há um século, seus bisavós e avós, com muita garra e determinação, chegaram ao Brasil e à Serra da Cantareira. Colonizadores, agricultores e fazendeiros, deram origem à história do chef. Com essa predisposição, que está no sangue da família, e experiência somadas à paixão pela comida, o chef cozinha e troca experiências com grandes mestres da gastronomia - de forma profissional há 25 anos, tempo esse que o permitiu passar por diversas cozinhas no Brasil e américa do sul.
